  • 2 teaspoons vanilla bean paste or vanilla extract
  • 1 ¾ cup all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon matcha powder
  • 2 teaspoons sweet potato powder
  • 1 teaspoon activated charcoal powder (or a few drops of black food coloring)
  • ¼ cup edible eyeball sprinkles (use more or less based on preference)

Instructions

  • Cream vegan butter with ¾ cup sugar until fluffy.
  • Add flax eggs and vanilla, mixing well.
  • Gradually mix in flour, baking powder, and salt to form sticky dough.
  • Divide dough into three parts and mix in matcha, sweet potato, and charcoal.
  • Chill dough for 30 minutes to 1 hour.
  • Preheat oven to 350°F; prepare a baking sheet.
  • Scoop and roll dough portions together, coating in sugar.
  • Arrange on baking sheet, lightly pressing down and adding sprinkles.
  • Bake for 11-13 minutes until edges brown; cool on rack.
