- 1 cup organic sugar (¾ cup for cookies, ¼ cup for rolling)
- 1.5 flax eggs (1.5 tablespoons ground flaxseed mixed with 4.5 tablespoons water)
- 2 teaspoons vanilla bean paste or vanilla extract
- 1 ¾ cup all-purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon matcha powder
- 2 teaspoons sweet potato powder
- 1 teaspoon activated charcoal powder (or a few drops of black food coloring)
- ¼ cup edible eyeball sprinkles (use more or less based on preference)
Instructions
- Cream vegan butter with ¾ cup sugar until fluffy.
- Add flax eggs and vanilla, mixing well.
- Gradually mix in flour, baking powder, and salt to form sticky dough.
- Divide dough into three parts and mix in matcha, sweet potato, and charcoal.
- Chill dough for 30 minutes to 1 hour.
- Preheat oven to 350°F; prepare a baking sheet.
- Scoop and roll dough portions together, coating in sugar.
- Arrange on baking sheet, lightly pressing down and adding sprinkles.
- Bake for 11-13 minutes until edges brown; cool on rack.
