Ingredients

  • 1 cup warm water
  • 0.25 oz. active dry yeast (1 packet or 2 1/4 teaspoons)
  • 1/4 cup granulated sugar, divided
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup pure pumpkin puree
  • 34 cups unbleached all-purpose flour
  • 1 teaspoon salt
  • 6 pretzel sticks, broken in half

Instructions

  • Combine warm water, yeast, and 1 teaspoon of sugar. Let it proof for 10 minutes.
  • In a mixing bowl, whisk together remaining sugar, melted butter, egg, and pumpkin puree. Add the proofed yeast mixture.
  • Gradually mix in 2 cups of flour until dough becomes difficult to stir.
  • Knead dough on a floured surface until smooth and slightly sticky, about 6 minutes.
  • Place dough in a greased bowl, cover, and let rise until doubled in size, about 1 hour.
  • Prepare 48 pieces of kitchen twine and set aside.
  • Punch down dough, divide into two pieces, and shape into balls.
  • Tie each ball with prepared strings in a star shape and place on a baking sheet.
  • Cover and let rise for another 30 minutes.
  • Preheat oven to 350°F (175°C). Bake rolls for 15-20 minutes until golden brown.
  • Cool rolls slightly, snip strings, and remove. Insert a pretzel stick into the center before serving.
