- 2 lb frozen broccoli
- 1 large zucchini, chopped
- 1 cup chopped onion
- 1 teaspoon butter
- 2 medium potatoes, peeled and chopped
- ½ cup heavy cream
- 2 cups shredded cheese (cheddar works wonderfully)
- 1 teaspoon salt
- 14 oz can chicken or vegetable broth
Instructions
- Press the SAUTE button on the Ninja Foodi and melt butter with chopped onions until fragrant.
- Add broccoli, zucchini, potatoes, broth, and salt. Lock the lid and set to pressure cook for 5 minutes.
- Perform quick release. Blend the mixture with an immersion blender to your desired consistency.
- Stir in heavy cream and shredded cheese until melted. Adjust seasoning if necessary.
- Serve warm, garnishing with additional cheese or herbs.
