  • 15 tablespoons unsalted butter, melted (212 grams)
  • 2 large eggs, room temperature
  • ⅓ cup whole milk, room temperature (80 grams)
  • ⅓ cup homemade lemon curd or store-bought (about 100 grams)

Instructions

  • Preheat oven to 350°F (175°C) and prepare a 9-inch springform pan.
  • Whisk together flour, baking soda, and salt in a bowl.
  • Combine lemon zest and sugar, rubbing zest into sugar.
  • Mix in lemon juice, vanilla extract, and melted butter, then add eggs and milk.
  • Gradually add dry ingredients to wet mixture until smooth.
  • Spread batter in pan, dollop lemon curd on top, and swirl.
  • Bake for 45-55 minutes until golden and firm.
  • Cool for 30-45 minutes, dust with powdered sugar, and serve warm.
